For now, let's jump right into it!
Here's what you'll need (all ingredients not pictured) Also, don't judge my crayon writing. I'm a toddler mom so that's all we have around, haha!
Ingredients:
1 cup butter (softened)
3/4 cup packed light brown sugar
1/2 cup white sugar
2 eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup coarsely chooped macadamia nuts*
1 cup coarsely chopped white chocolate
This recipe made 33 cookies. The amount will vary depending on how big/small you make the cookies.
Okay let me start by saying it was hard for me to find macadamia nuts. I settled for a can of cashews & macadamia nuts mixed together. When I opened it, turns out there was only about 10 macadamia nuts in there. Womp womp.
Eh, what can ya do. I was ready to make the cookies, so I just chopped up the cashews too. Honestly the end result was delicious and people didn't notice the difference.
Okay let's start! :)
1. Take 2 sticks of butter out of the fridge a couple hours in advance to make sure they are sofented and ready.
2. Pre heat the oven to 350 degrees F.
3. Chop up the nuts.
4. Chop the white chocolate. I bought 4oz Ghirardelli bars and used 1 1/2 to make 1 cup.
5. Using a hand mixer, cream the butter, brown and white sugar until fluffy and smooth. Beat in the eggs, one at a time. Then, add in the vanilla. (I know you love my slippers, haha!)
6. In a separate bowl, combine the flour, baking soda and salt. Add the dry mix into the creamed mixture. Stir with a rubber spatula.
7. Mix in the nuts and white chocolate until well combined.
8. Drop dough by teaspoonfuls onto baking sheet lined with aluminum foil. No need to grease it.
9. Bake for 10 minutes or until golden brown. For the bigger cookies it took about 12-14 minutes. Just keep checking on them. Here's my first batch right out of the oven.
10. Place cookies on a cooling rack. I used the wire rack from the mircrowave, gotta be creative sometimes ;)
The end result are delicious chewy cookies! Soooo good! Enjoy 1 or 2 (or 5 or 6) with a nice cold glass of milk. Yummmmy!
