Black Bean Quesadilla with Guacamole Recipe


Let me start by saying how much I looooove this recipe! It smells so good as you're cutting up all the ingredients and it tastes DELICIOUS! Even the pickey toddler will eat it. Please forgive the quality of the pics, I snap them really fast on my iphone as I'm cooking. I'm usually also entertaining my silly toddler. 

Here are most of the ingredients I used for this meal. 2 flour tortillas, cheese, black beans, cilantro, onion, green pepper and avocados.

Let's start with making the guacamole first.



I took 4 avocados and mushed them up.


Next I added onions, cilantro, a splash of vinegar, salt and pepper. Remember to taste as you go to make sure you aren't adding too much of something.


Don't throw those pits out! Save them to put back in the guac.


The pits prevent the avocado from browning. BAM! Guacamole is done!


Spray a frying pan with some PAM. Place your tortilla on it and warm over medium heat.


Chop up your onions and peppers into tiny pieces. 


Add the black beans, onions, peppers, cheese and cilantro and cover it with another tortilla.


After a few minutes, check to make sure it's browning nicely.


Flip it and let the other side cook for a few more minutes.


Mmmm looking so good and crispy already!


Cut it into 4 pieces. A pizza cutter would work, but I don't have one. The knife worked fine.
