Pecan Pie Recipe

So I have been staring at these 2 huge bags of pecans that someone gave me from Thanksgiving. I have also been staring at the empty pie shells in my freezer leftover from Thanksgiving as well. So I decided to combine em. I just did a quick google search of "Pecan Pie Recipe" and took the first one that came up. It was from one of my favorite easy recipe sites allrecipes.com. I also made some "Peacan Pie Cookies" (thanks Pinterest!) a couple months ago. Recipe will be posted soon.

It was a really simple recipe. The hardest part was cracking those damn pecans. I don't have a nut cracker. I used a spoon that I BANG BANGED on the shell. Really annoying but I was determined. Not to self: Buy a freakin' nut cracker -_-

INGREDIENTS:

1 cup light brown sugar
1/4 cup white sugar
1/2 cup butter
2 eggs
1 tablespoon all-purpose flour
1 tablespoon milk
1 teaspoon vanilla extract
1 cup chopped pecans

DIRECTIONS:

1. Preheat oven to 400 degrees F

2. In a large bowl, beat eggs until foamy, and stir in melted butter. Stir in the brown sugar, white sugar and the flour, mix well. Last add the milk, vanilla and nuts.

3. Pour into an unbaked 9-in pie shell. Bake in preheated oven for 10 minutes at 400 degrees, then reduce temperature to 350 degrees and bake for 30-40 minutes, or until done.


Secret: I've never made a pie before! I really didn't know how to tell if it was "done." I let it bake for 35 minutes to be safe and it was a nice brown color. The top layer is a really yummy thin sweet coating.

Okay, enough of the chat, here is the final product: Drooooool :) I should add I made it yesterday evening and as of 11:30am, there's only half a pie left. Yes, THAT good. Frank couldn't even wait for it to chill, he ate it warm and gave Frankie a taste too. Frankie kept saying "MMMM" and jumping & hitting Frank for more. Haha...
